These cookies are a win-win, delicious and nutritious! They’re a great grab-and-go meal or snack that can be made ahead of time (with the option to freeze too). Besides the fact that they are yummy, the healthful ingredients provide so many important nutrients. Oats are a whole-grain prebiotic (I’ll explain in another blog, but take my word, it’s good) that are associated with decreased risk for colon and breast cancers, avocado are a heart-healthy fat that also contains antioxidants and yogurt has calcium, vitamin D and protein.

Ingredients

  • 3 cups oats, old-fashioned
  • 1 1/2 cups white whole-wheat flour
  • 4 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1 tsp. salt
  • 1 ripe Avocado (mashed)
  • 1/2 cup maple syrup
  • 1/2 cup applesauce
  • 1 cup yogurt, plain
  • 2 eggs
  • 2 cups unsweetened dried cherries

Instructions

  1. Heat oven to 375 degrees F. Line 3 baking sheets with aluminum foil and spray with organic cooking oil spray or rub with a little canola oil until coated.
  2. Combine oats, flour, baking powder, baking soda, cinnamon and salt in a medium bowl
  3. Cream together applesauce, avocado, maple syrup in a large bowl; stir in yogurt and eggs
  4. Add oat mixture to avocado mixture and stir until combined; stir in cherries
  5. Using 1/4 cup measure, transfer the mixture onto lined baking sheets (8 cookies per sheet, each approximately 2 inches apart)
  6. Bake for approximately ~15 minutes (*oven times may vary)
  7. Transfer to wire racks to cool completely
