These bites were a really big hit with my clients. Make a batch and they’ll serve as a quick grab-and-go when you’re in a time crunch. Don’t be intimidated, you can’t mess up the recipe, even if you combine all the ingredients at the same time! Also, feel free to be creative and make some substitutions. You can swap a different type of nut or, if you prefer a less sweet taste, omit the cocoa nibs. You can also replace the maple syrup with honey depending on your taste preference.

Ingredients

  • 1 cup oats (or oat blend)
  • 1/4 cup almond meal
  • 1/2 half cup peanuts
  • 2 tablespoons chia seeds
  • 1/4 cup cocoa nibs
  • 1/2 cup dried wild blueberries
  • 1/2 raisins
  • 1/2 teaspoon vanilla extract
  • 1/4 cup maple syrup

Instructions

  1. Combine oats, almond meal, peanuts, cocoa nibs in food processor for a few pulses.
  2. Add the vanilla extract and the syrup and continue to pulse until desired consistency.
  3. Take a scoop or just use your hands and make into balls.
  4. Refrigeration an airtight container for up to 5 days.
