This is one of my favorite salads of all times. Just combine the ingredients and it melds together nicely, no dressing needed. You can swap feta for goat cheese if you want. I love both! (You’ll notice strawberries in the picture, that was just an add-in I threw in that day.)

Ingredients

  • 3 cups Watermelon (bite size pieces)
  • 1 1/2 cups cucumber pieces (bite size pieces, seedless or scrape out seeds)
  • 1 cup grape or cherry tomatoes cut in half (cut first then measure 1 cup)
  • 1 cup purple grapes cut in half (cut first then measure 1 cup)
  • 1 large avocado (bite size pieces)
  • 1/3 cup goat cheese (you can also use feta)

Instructions

  1. Combine ingredients & refrigerate for at ~30 minutes. No salad dressing needed ~ Yup, you heard correctly! The water content of the components melds everything together. It’s an easy, delicious, nutritious and hydrating summer salad! Enjoy!
