Ingredients

  • 8 oz. tofu (any kind; note - this is ~ 1/2 a container)
  • 1 medium banana
  • 1/2 cup chopped walnut
  • 1 Tbsp. cinnamon
  • 1/4 tsp. vanilla extract
  • 1/4 cup maple syrup
  • *Add walnut pieces & cinnamon for garnish (if desired)

Instructions

  1. Combine above ingredients in a food processor and blend to desired consistency.
  2. Use as a fruit dip, drizzle on top of fruit or eat as a pudding - This quick, easy recipe is versatile and nutrient-dense. Even a few spoonfuls will provide some good quality protein. *Store in refrigerator for 2-3 days.
